Why Marine-Grade Materials Are Non-Negotiable

In Charleston, every material in an outdoor kitchen must be rated for salt air and high humidity. This is most critical for projects on the barrier islands — Seabrook Island, Wild Dunes, Folly Beach, and any waterfront property in Mount Pleasant or Daniel Island. But the same standard applies across the Lowcountry — even properties several miles from the water in West Ashley, Johns Island, and Summerville experience enough salt air and humidity to degrade materials that are not rated for coastal exposure.

Stainless steel appliances. 304 or 316 grade — standard appliances will rust. For properties on the barrier islands, 316 marine-grade stainless is the right specification.

Cabinet frames. Concrete board, aluminum, or marine-grade materials — wood frames will deteriorate. We have seen outdoor kitchens on Isle of Palms and Sullivan's Island that were built with interior-grade materials and were showing significant corrosion within two years of installation.

Hardware. 316 stainless throughout — for all fasteners, hinges, and hardware exposed to the coastal environment.

Countertops. Granite is the most popular choice for Charleston outdoor kitchens — it handles heat well, is relatively easy to maintain, and looks appropriate in outdoor settings. Concrete countertops require sealing and can crack in temperature extremes. Porcelain tile is durable and cost-effective.

The Covered Structure Question

The most important decision in a Charleston outdoor kitchen is whether it is covered. An outdoor kitchen without a covered structure is genuinely unusable during the afternoon thunderstorms that are common from May through September — which are also the months when you most want to be cooking outside. A covered structure transforms an outdoor kitchen from a fair-weather amenity into a space you use consistently.

For most Charleston homeowners — from Mount Pleasant and Daniel Island to Kiawah Island and Sullivan's Island — we recommend integrating the outdoor kitchen into a covered structure from the start. The incremental cost of adding the cover during initial construction is significantly lower than retrofitting it later.
